František Dudo from Modra worked in the school pub as a winery, where he taught future winemakers. Ladislav Čavojský from Pezinok was the head of the school property and later taught the subject of agricultural technology at the SVOŠ in Modra. They went to work in the vineyards to work and relax, in the cellar they impatiently waited for a new harvest, for burčak, bottled and tasted. To this day, the historic large wooden ones are the decoration of our cellars and a reminder of the hard but at the same time nice work of our grandfathers, which we try to preserve.
The charm of the vineyards and the wine environment led their children to the viticultural tradition. Today, our parents Mária and Ľubomír Čavojskí met as classmates at the secondary vocational school of wine and fruit growing in Modra. Together they graduated from the wine department at the Horticultural Faculty of Mendel University in Brno, and since 2000 they have been cultivating vineyards for their parents, who are trying to gradually expand to others.
At present, we, Tomáš and Katarína Čavojskí, the youngest generation, are also involved in the functioning of viticulture and winemaking. The vision of our winery is to continue this tradition after our parents and grandparents with innovative and at the same time bold plans, with enthusiasm and the goal of pleasing friends and wine lovers.
Today, our family, friends, acquaintances and part-time workers meet to harvest 5 hectares of vineyards located in Pezinok and Modra. Our grapes are born on the southern slopes of the Little Carpathians, which we consider to be the most important area in grape growing in Slovakia. Our goal is to grow the highest quality grapes every year, which will directly and honestly reflect the given year. For us, growing grapes is about maintaining and creating the landscape, a commitment to nature and also about creating value for future generations of wine. The aim is to produce wine that will represent not only the vineyard from which it comes, but also the locality of Pezinok, Modra as well as the entire Malokarpatska wine-growing region.
In production we use modern methods, gentle processing of grapes, reductive wine production technology and controlled fermentation. We try to produce modern wines with a feeling and tradition, which helps us maintain the uniqueness of Malokarpatska wines. The wine must reflect the result of honest and hard work, and this is exactly what we want to bring to all lovers and enthusiasts of Slovak wine.
