SPRING POTATO SALAD WITH LEMON DRESSING

What do you need:

  • 450 g potatoes
  • 400 g of common beans
  • 6 radishes
  • 2 handfuls of valerian

For dressing:

  • 1 large organic lemon
  • 1 ČL honey
  • 1 - 2 cloves garlic (to taste)
  • 40 ml of lemon oil
  • 2 PCS of chopped herbs, e.g. dill, parsley, thyme
  • salt and pepper

How to do it:

Wash the potatoes and cook them whole in a pot in a sufficient amount of lightly salted water until soft. Wash, clean and cook the beans in a second pot of water. Wash, clean and chop radishes. Wash and clean the valerian field. Allow the boiled potatoes to cool slightly, then peel and cut into cubes. Mix everything gently and cover with dressing.

dressing:

Squeeze the lemon. Wash the herbs, remove the stalks and finely chop. Mix all the ingredients and add the lemon oil while mixing. Season with salt and pepper.

TIP:

You can add 1 CL of Dijon mustard to the dressing, so the dressing will gain character.
