About the farmer

The farm was founded by Jaro Zápražný, and together with the help of his family, mainly his father, brother and sister, they devoted themselves to raising their own cattle and later also processing slaughter meat. After building the workshop, they decided to produce and distribute high-quality, local fresh meat. Later, he became fascinated with steak meat and everything related to it. It didn't take long and the desire for a seasoned local steak didn't take long. They decided to build a professional glass aging chamber for steaks.

The creation of Pavlické steak

He's been with us since the beginning of production, we just didn't call him that. The idea came only recently when the rebirth of the JFR Bulls company took it to the next level. A believable story, where when selling directly at the farm, after a tour of the farm, the customer can buy the best steak in the wider area and not just a steak.

About Pavlicka steak

We slaughter bulls and heifers mostly at the age of 20-24 months. Our carrier breeds include the Slovak spotted breed, which we currently keep in a herd of about 300 heifers and bulls. There are also Holstein breeds, Belgian blues, and outright steak breeds such as Black Angus, Red Angus, Hereford, Charolais. Did you know that Pavlický cattle are continuously slaughtered under the supervision of our veterinarian? Thanks to this, we can guarantee that all the meat that our farm sells is of Slovak origin, fresh, healthy and under constant control. Due to the aging of the meat, which is necessary to maintain the principles of beef processing, the whole half is in the cold room for at least 2 days. Demolition and disassembly into individual parts takes place continuously according to demand.

What else should you know?

Wet aging of Pavlické steaks takes place in a vacuum for 14 to 28 days. Pavlické steaks are dry aged for 21 or more days. You won't find Pavlic steaks on the counter of any supermarket. Our approach to cattle breeding is in harmony with nature, and we use the by-product of the breeding to fertilize vegetables in the surrounding orchards and fields where we cooperate with the company Agro Máčaj. Also, surpluses from their production are grazed by our animals and thus we help the ecology in this chain. Appropriate selection of fodder and supplements for a balanced livestock diet helps the natural growth of our animals.
